Description
Fresh lemon basil pasta salad with zucchini, spinach, herbs and creamy plant based dressing. Perfect vegetarian meal prep recipe.
Ingredients
1 large zucchini
8 oz orecchiette pasta
2–3 cups spinach
1 jar artichoke hearts
3 tbsp olive oil
1/2 red onion
1 lemon
1/4 cup basil
1/4 cup parsley
1–2 garlic cloves
3 tbsp pepitas
1/4 cup plant yogurt
1 tsp miso paste
salt
Instructions
1. Cook pasta until al dente.
2. Sauté zucchini in olive oil.
3. Add onion and garlic and cook briefly.
4. Stir in spinach until wilted.
5. Whisk yogurt, lemon zest, lemon juice, miso and oil.
6. Combine pasta, vegetables and artichokes.
7. Add herbs.
8. Toss with dressing.
9. Top with seeds and season.
Notes
Great for meal prep.
Add chickpeas for extra protein.
