Description

Chewy Korean potato noodles made with simple ingredients. This non-spicy vegan tteokbokki is soft, glossy, and easy to prepare at home.


Ingredients

2 large potatoes

1 cup potato starch

1/2 tsp salt

1 tbsp neutral oil

2 tbsp soy sauce

1 tsp minced garlic

1 tsp sesame oil

Water as needed

Chopped parsley or scallions (optional)


Instructions

1. Peel and grate the potatoes, then squeeze out excess moisture.

2. Collect settled starch and mix with grated potatoes.

3. Add potato starch and salt to form a soft dough.

4. Roll dough into thin ropes and cut into noodle pieces.

5. Boil noodles until they float, then rinse with cool water.

6. Heat oil, add garlic, then stir in noodles, soy sauce, and sesame oil.

7. Cook gently until glossy and coated.

Notes

Handle noodles gently to keep their shape.
