Description

A rich and comforting keto cheeseburger casserole made with ground beef, cream cheese, eggs, and cheddar. Perfect for low carb dinners and keto meal prep.


Ingredients

1 lb ground beef

6 oz cream cheese, softened

2 cups shredded cheddar cheese

2 large eggs

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt

1/2 tsp black pepper

1/4 cup chopped dill pickles (optional)


Instructions

1. Preheat oven to 375°F and grease a casserole dish.

2. Brown ground beef in a skillet and drain excess grease.

3. Stir in cream cheese until fully melted.

4. Add garlic powder, onion powder, salt, and pepper.

5. Whisk eggs and slowly mix into beef off heat.

6. Fold in 1 1/2 cups cheddar cheese and pickles.

7. Transfer to casserole dish and top with remaining cheese.

8. Bake 20–25 minutes until bubbly and golden.

Notes

Add bacon or mustard for extra cheeseburger flavor.

Store leftovers in the refrigerator for up to 4 days.
