Description
A creamy keto beef and cauliflower casserole made with ground beef, mashed cauliflower, cheddar, and spices for a cozy low-carb dinner.
Ingredients
1 lb ground beef
4 cups cauliflower florets
4 oz cream cheese
1 1/2 cups shredded cheddar cheese
1/2 cup heavy cream
1 small onion, diced
3 garlic cloves, minced
1 tsp paprika
1 tsp dried oregano
Salt and pepper to taste
1 tbsp olive oil
Instructions
1. Steam cauliflower until tender and mash lightly.
2. Brown ground beef with onion, garlic, and seasonings.
3. Stir in cream cheese and heavy cream until creamy.
4. Fold in mashed cauliflower and transfer to casserole dish.
5. Top with cheddar and bake at 375°F for 20–25 minutes.
Notes
Add mushrooms, spinach, or jalapeños for variation.
This casserole freezes well for up to two months.
