Description
Healthy Street Corn Pasta Salad is a creamy vegetarian cold pasta recipe with sweet corn, cheddar, Cotija, lime, and smoky spices perfect for summer.
Ingredients
1 lb short pasta
2 cups corn
1 avocado, diced
1/2 cup fresh basil
1/2 cup fresh cilantro
1 tbsp fresh chives
1 head romaine lettuce
4 tbsp salted butter
1/2 cup shredded spicy cheddar
3/4 cup Cotija or feta cheese
4 oz cream cheese
1/4 cup mayonnaise or yogurt
1/3 cup sour cream
2 tbsp olive oil
2 tbsp lime juice
1 garlic clove, minced
2 tbsp chili powder
2 tsp smoked paprika
1/2 tsp cayenne pepper
Salt and pepper to taste
Instructions
1. Cook pasta until al dente, drain and cool.
2. Sauté corn in butter and spices until lightly charred.
3. Mix cream cheese, mayo or yogurt, sour cream, olive oil, lime juice, and garlic.
4. Combine pasta, corn, lettuce, cheeses, and herbs.
5. Toss with dressing.
6. Fold in avocado before serving and chill 30 minutes.
Notes
Add avocado and lettuce just before serving for best texture.
Can be made 24 hours in advance without avocado.
