Healthy sticky chicken bowls with rice, broccoli, and a rich homemade sauce. A quick high protein dinner perfect for meal prep.


Ingredients

Scale

2 cups uncooked rice

2 small heads broccoli

3 large chicken breasts

2 tbsp olive oil

1 tsp salt

1/2 tsp pepper

1 tsp chili powder

1 tsp smoked paprika

1 tsp onion powder

1 tsp oregano

1/2 cup soy sauce

1/2 cup honey

1/4 cup rice vinegar

3 cloves garlic

2 tbsp sriracha

2 tsp sesame oil

1 tsp ground ginger

2 tsp arrowroot powder

1/2 cup mayo

1 tbsp sriracha

23 tbsp water

sesame seeds


Instructions

1. Cook rice and set aside.

2. Chop and cook broccoli.

3. Season chicken.

4. Cook chicken in skillet.

5. Mix sauce ingredients.

6. Add sauce to chicken and thicken.

7. Prepare spicy mayo.

8. Assemble bowls and serve.

Notes

Use brown rice for extra fiber.

Store in fridge up to 4 days.
