Description

Healthy honey lime chicken served with fresh mango salsa. A bright, refreshing summer dinner packed with citrus flavor and lean protein.


Ingredients

Scale

2 boneless skinless chicken breasts

2 tbsp honey

Juice and zest of 2 limes

2 tbsp olive oil

2 cloves garlic minced

1 tsp ground cumin

1/2 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

1 large mango diced

1/4 cup red onion finely chopped

1 small jalapeño minced

2 tbsp cilantro chopped

Juice of 1 lime

Salt and pepper to taste


Instructions

1. Whisk honey, lime juice, lime zest, olive oil, garlic, cumin, paprika, salt, and pepper.

2. Coat chicken with marinade and refrigerate for 30 minutes.

3. Mix mango, red onion, jalapeño, cilantro, and lime juice to make salsa.

4. Heat skillet or grill pan and cook chicken 5-6 minutes per side.

5. Let chicken rest then slice.

6. Serve topped with mango salsa.

Notes

Use ripe mango for the best sweetness.

Chicken can also be grilled outdoors for smoky flavor.
