A light and flavorful healthy detox soup made with chicken, fresh vegetables, and zesty lemon, perfect for keto and low-carb diets.
Ingredients
2 tbsp olive oil
1 medium onion
3 cloves garlic
1 tsp fresh ginger
1/2 cup bell peppers
1 tsp Italian seasoning
1/4 tsp red pepper flakes
1 tsp sea salt
1/2 tsp black pepper
1 lb chicken breasts
6 cups chicken broth
1 cup broccoli
1 cup cauliflower
2 tbsp lemon juice
Instructions
1. Heat oil and sauté onion, garlic, and ginger.
2. Add peppers and seasonings.
3. Add chicken and broth, simmer 20 minutes.
4. Shred chicken and return to pot.
5. Add vegetables and cook until tender.
6. Stir in lemon juice and serve.
Notes
Store in fridge up to 4 days.
