Description
A moist and healthy cottage cheese banana bread made with almond flour, naturally sweetened and perfect for breakfast or snacks.
Ingredients
2 ripe bananas, mashed
3 eggs
1/2 cup cottage cheese
3 tablespoons maple syrup
2 teaspoon vanilla extract
2 1/2 cups almond flour
1 teaspoon baking soda
2 teaspoons cinnamon
Optional: walnuts, chocolate chips, blueberries
Instructions
1. Preheat oven to 350°F and line a loaf pan.
2. Mash bananas in a bowl.
3. Add eggs, cottage cheese, maple syrup, and vanilla.
4. Mix dry ingredients separately.
5. Combine wet and dry mixtures.
6. Add optional mix-ins.
7. Pour into pan.
8. Bake 45–55 minutes.
9. Cool before slicing.
Notes
Use ripe bananas for best flavor.
Store in airtight container up to 4 days.
