Description
A crisp and refreshing green cabbage cucumber salad with dill and a simple vinegar dressing. Light, healthy, and perfect for summer meals.
Ingredients
1 medium green cabbage (2 lbs), shredded
3 medium cucumbers or 1 English cucumber, sliced
4-5 green onions, chopped
2 tbsp fresh dill, chopped
6 tbsp sunflower oil
4 tbsp distilled white vinegar
1 tsp fine salt
1/4 tsp ground black pepper
Instructions
1. Shred cabbage and place in large bowl.
2. Slice cucumbers and add to cabbage.
3. Add chopped green onions and dill.
4. Whisk sunflower oil, vinegar, salt, and pepper.
5. Pour dressing over salad and toss well.
6. Let rest 10-15 minutes before serving.
Notes
For softer cabbage, massage lightly with salt before mixing.
Chill 30 minutes for deeper flavor.
