Greek chicken bowls made for easy clean eating meal prep with fresh veggies, grains, and tzatziki.
Ingredients
4 small chicken breasts
2 cups cucumber
2 cups grape tomatoes
1 cup red onion
4 cups romaine lettuce
2 cups cooked rice or quinoa
2 tbsp lemon juice
1 cup tzatziki sauce
1/4 cup olive oil
1/2 cup feta cheese
Instructions
1. Season chicken with olive oil, lemon juice, salt, and pepper.
2. Cook chicken in a skillet until fully cooked.
3. Prepare vegetables and grains.
4. Assemble bowls with lettuce, grains, chicken, vegetables, feta, and tzatziki.
