Ingredients
4 small chicken breasts
1/4 cup olive oil
2 tbsp lemon juice
2 cups cucumber, diced
2 cups grape tomatoes, halved
1 cup red onion, sliced
4 cups romaine lettuce, chopped
2 cups cooked rice or quinoa
1/2 cup feta cheese
Tzatziki sauce to taste
Instructions
1. Whisk olive oil and lemon juice. Marinate chicken for 20-30 minutes.
2. Cook chicken 5-7 minutes per side until done. Rest and slice.
3. Prepare vegetables and grains.
4. Divide grains into bowls.
5. Top with chicken, vegetables, feta, and tzatziki.
