Description
Creamy French onion chicken orzo casserole with tender chicken, caramelized onions, and melted cheese baked in one pan.
Ingredients
1½ lbs boneless skinless chicken breasts
3 large yellow onions, sliced
2 tbsp olive oil
2 tbsp butter
3 cloves garlic, minced
1½ cups dry orzo
2 cups beef broth
1½ cups chicken broth
¾ cup heavy cream
1½ cups shredded Gruyère
1 cup shredded mozzarella
1 tsp fresh thyme
1 tsp salt
½ tsp black pepper
Instructions
1. Preheat oven to 375°F.
2. Cook onions in olive oil and butter until golden.
3. Add garlic and thyme.
4. Stir in orzo and broths.
5. Nestle chicken into mixture.
6. Add cream and simmer.
7. Cover and bake 25 minutes.
8. Add cheese and bake uncovered until melted.
Notes
Slice onions evenly for best browning.
Let rest before serving to set.
