Description
A quick and creamy tuna melt wrap made with skipjack tuna, Greek yogurt, mozzarella cheese, and fresh vegetables for a simple healthy lunch.
Ingredients
1 can skipjack tuna, drained
1/4 cup red onion, diced
1/4 cup corn
1/2 tsp garlic powder
1/2 tbsp Dijon mustard
1 tbsp dill relish
1 tbsp lemon juice
1/4 tsp black pepper
2 tbsp Greek yogurt
1/4 cup shredded mozzarella cheese
1 large tortilla wrap (burrito size)
Instructions
1. Drain tuna and place it in a bowl.
2. Add diced onion, corn, garlic powder, Dijon mustard, relish, lemon juice, black pepper, and Greek yogurt.
3. Mix until creamy and well combined.
4. Stir in half of the mozzarella cheese.
5. Spread tuna mixture in the center of the wrap.
6. Top with remaining mozzarella cheese.
7. Fold wrap tightly.
8. Toast in a skillet for 2–3 minutes per side until golden and cheese melts.
9. Slice and serve warm.
Notes
Use whole wheat wraps for extra fiber.
Add lettuce or tomato for additional freshness.
The tuna mixture can be refrigerated for up to three days.
