A creamy and healthy avocado egg salad made with fresh herbs and simple ingredients, perfect for a quick and nutritious lunch.
Ingredients
4 hard boiled eggs, grated or chopped
1/2 ripe avocado, mashed
1/2 tbsp chopped dill pickle
1/2 tbsp chopped scallion or red onion
1/2 tbsp lemon juice
1/2 tsp dijon mustard (optional)
1/2 tsp ground pepper
1/8 tsp sea salt
1–2 tbsp fresh parsley or dill
Lettuce, bread, or crackers for serving
Instructions
1. Place eggs in a bowl and add mashed avocado
2. Mix in pickle, onion, lemon juice, mustard, salt, and pepper
3. Stir until well combined
4. Taste and adjust seasoning
5. Garnish with fresh herbs
6. Serve on toast, lettuce, or crackers
Notes
Use ripe avocado for best texture
Serve immediately for freshness
