Description
A refreshing Easy Asian Cucumber Salad made with Persian cucumbers, garlic, soy sauce, rice vinegar, sesame oil, and chili oil. A healthy Asian-inspired side dish ready in 10 minutes.
Ingredients
5 Persian cucumbers
1/2 tbsp minced garlic
3/4 tbsp light soy sauce
3/4 tbsp rice vinegar
1/2 tbsp sesame oil
1 tbsp chili oil
1/2 tbsp sugar
1/2 tsp salt
1/2 tbsp sesame seeds
Instructions
1. Wash and slice the Persian cucumbers into thin rounds or lightly smash them.
2. In a bowl, whisk soy sauce, rice vinegar, sesame oil, chili oil, sugar, salt, and minced garlic.
3. Add cucumbers to the bowl and toss thoroughly to coat.
4. Sprinkle sesame seeds on top.
5. Serve immediately or chill for 20 minutes before serving.
Notes
For less moisture, salt cucumbers and drain before mixing.
Adjust chili oil based on preferred spice level.
Best enjoyed within 24 hours for maximum crunch.
