A crisp cucumber carrot salad with sesame seeds and lemon chili dressing. Fresh, quick, and perfect for healthy meals or snacks.
Ingredients
1 large cucumber, julienned or thinly sliced
2 medium carrots, julienned
2 tbsp sesame seeds
2 tbsp fresh parsley, chopped
1 clove garlic, minced
1 tbsp olive oil
1 tbsp lemon juice
1 tsp gochugaru
1 tsp soy sauce
1/2 tsp sugar
Instructions
1. Slice cucumber and julienne carrots.
2. Place cucumber, carrots, sesame seeds, parsley, and garlic in a bowl.
3. Mix olive oil, lemon juice, soy sauce, sugar, and gochugaru in a small bowl.
4. Pour dressing over vegetables.
5. Toss until evenly coated.
6. Let salad rest for 5 minutes.
7. Serve fresh and enjoy.
Notes
Adjust chili flakes for spice level.
