Description

Croissant Broodjes are flaky, golden French-style sandwiches filled with both sweet and savory ingredients. Inspired by Lily Morel’s family traditions, this recipe blends buttery croissants with creative fillings that make them perfect for brunch, lunch, or even dessert.

Ingredients

– 6 fresh croissants or homemade croissant dough

– 3 tbsp unsalted butter (for reheating or crisping)

– 100g smoked ham (thinly sliced)

– 100g brie or Swiss cheese

– 1 tbsp Dijon mustard or herbed cream cheese

– Fresh arugula leaves

– Optional sweet version: sliced strawberries, mascarpone, and honey

– Salt and pepper to taste

Instructions

1. Preheat oven to 180°C (350°F). Lightly warm the croissants for 5–6 minutes until crisp.

2. Slice each croissant horizontally without cutting all the way through.

3. Spread Dijon mustard or cream cheese evenly inside.

4. Layer smoked ham and cheese for the savory version, or mascarpone and fruit for the sweet one.

5. Add arugula or fresh herbs if desired.

6. Close gently and press slightly to secure the filling.

7. Serve immediately while warm and flaky.

Notes

• Use day-old croissants for best crispness after reheating.

• Always reheat in the oven, not the microwave, to preserve texture.

• Experiment with fillings like chicken pesto, almond cream, or smoked salmon and dill.
