Description

A healthy crockpot salsa chicken bowl recipe made with tender slow-cooked chicken, beans, and corn. Perfect for Weight Watchers and easy meal prep.


Ingredients

2 lbs boneless skinless chicken breasts

2 cups salsa

1 can black beans, drained and rinsed

1 cup corn kernels

1 tsp chili powder

1 tsp ground cumin

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp salt

1/4 tsp black pepper

1 tbsp lime juice


Instructions

1. Place chicken breasts in the crockpot and season with spices.

2. Pour salsa over the chicken and add black beans and corn.

3. Cover and cook on low for 6-7 hours or high for 3-4 hours.

4. Shred chicken directly in the crockpot using two forks.
