A cozy crockpot chicken pot pie stew filled with hearty chicken, vegetables, and classic pot pie flavors in a creamy, comforting broth.
Ingredients
1.5 lbs chicken breasts
1 cup sliced carrots
1 cup chopped celery
2 cups diced potatoes
1 cup frozen peas
1 diced onion
4 cups chicken broth
1 cup heavy cream or half-and-half
4 tbsp butter
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp thyme
1 tsp parsley
Instructions
1. Place chicken into crockpot and top with vegetables and seasonings.
2. Pour broth over ingredients and cook on low for 6–7 hours or high for 3–4 hours.
3. Remove chicken, shred, and return to crockpot.
4. Stir in peas, cream, and butter.
5. Cook 20–30 more minutes until thickened and serve.
Notes
Serve with biscuits for a classic pot pie experience.
