Description

Healthy crockpot chicken fajita bowls made with tender chicken, bell peppers, and bold Tex-Mex spices. Perfect for meal prep and easy weeknight dinners.


Ingredients

1.5 lbs boneless skinless chicken breasts

3 cups sliced bell peppers

1 large sliced onion

2 tbsp olive oil

3 tbsp lime juice

3 garlic cloves, minced

2 tsp chili powder

1 tsp cumin

1 tsp smoked paprika

1 tsp oregano

1 tsp salt

1/2 tsp black pepper


Instructions

1. Add peppers and onions to the crockpot.

2. Place chicken on top of vegetables.

3. Mix olive oil, lime juice, garlic, and spices.

4. Pour seasoning mixture over chicken.

5. Cook on LOW 6 hours or HIGH 3-4 hours.

6. Shred chicken and mix well before serving.

Notes

Serve over rice, cauliflower rice, or greens.

Store leftovers up to 4 days in the fridge.
