Description
Creamy tomato gnocchi with burrata made with fresh tomatoes, basil, and a rich cream sauce for an easy vegetarian dinner.
Ingredients
2 pints cherry tomatoes
6 garlic cloves
1/2 cup fresh basil leaves
2 (16-oz) packages potato gnocchi
2 (4-oz) burrata balls
1/2 cup heavy cream
1/4 cup extra-virgin olive oil
1 tsp kosher salt
1/2 tsp black pepper
1/2 tsp red pepper flakes
Instructions
1. Bring a large pot of salted water to a boil and cook gnocchi according to package directions. Drain and set aside.
2. Heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant.
3. Add cherry tomatoes and cook until softened and bursting.
4. Season with salt, pepper, and red pepper flakes. Simmer gently.
5. Stir in heavy cream and cook until sauce thickens slightly.
6. Add gnocchi and toss to coat evenly.
7. Remove from heat, add basil, and top with torn burrata before serving.
Notes
Serve immediately for the best texture.
Add a splash of pasta water if the sauce becomes too thick.
