Description
Creamy pesto chicken pasta bake with broccoli, spinach, parmesan, and mozzarella. A warm, one-pot comfort dinner.
Ingredients
1 lb pasta
5–6 cups chicken broth
1/3 cup sun-dried tomatoes
1 lb chicken breast
1 tbsp butter
1/2 onion
1 head garlic
2 cups heavy cream
1–2 cups broccoli
2 handfuls spinach
2 cups parmesan
2 cups mozzarella
1/2 cup pesto
Instructions
1. Cook chicken and set aside
2. Sauté onion and garlic
3. Add broth and cook pasta
4. Stir in cream
5. Add cheese
6. Mix vegetables and pesto
7. Top with cheese and bake
8. Garnish and serve
Notes
Use fresh parmesan for best flavor
Add extra broth if pasta absorbs too much liquid
