Description

Creamy Cajun sausage pasta made in one pot with smoked sausage, Cajun spices, spinach, and parmesan cream sauce. A quick and hearty dinner.


Ingredients

Scale

10 oz smoked sausage

1 cup bell peppers

1/2 cup onion

1 cup fresh spinach

2 cups low sodium chicken broth

4 oz pasta

1 tbsp cajun seasoning

1/4 tsp cayenne pepper

1/2 tsp garlic powder

1 tbsp olive oil

1 cup heavy cream

1 cup parmesan cheese


Instructions

1. Heat olive oil in a skillet and cook sliced sausage until browned.

2. Add onion and bell peppers and cook until softened.

3. Stir in Cajun seasoning, garlic powder and cayenne pepper.

4. Add chicken broth and pasta and bring to a simmer.

5. Cook until pasta becomes tender.

6. Add heavy cream and spinach and stir until spinach wilts.

7. Mix in parmesan cheese until sauce thickens.

8. Serve warm and garnish with parsley.

Notes

Use andouille sausage for stronger Cajun flavor.

Fresh parmesan creates the best creamy sauce.
