Description

A high protein Cobb salad made with chicken, eggs, avocado, and a tangy balsamic dressing.


Ingredients

6 oz smoked turkey

5 cups romaine lettuce

2 cooked chicken breasts

2 hard-boiled eggs

1 avocado

1 cup cherry tomatoes

1/2 cup red onion

1/2 cup blue cheese

2 tbsp parsley

3 tbsp balsamic vinegar

1 tbsp Dijon mustard

1 garlic clove

1/3 cup olive oil

Salt and pepper


Instructions

1. Cook smoked turkey until browned.

2. Prepare eggs and slice.

3. Arrange lettuce on platter.

4. Add toppings in rows.

5. Mix dressing and drizzle before serving.

Notes

Serve dressing on the side for best freshness.

Use feta instead of blue cheese if preferred.
