Ingredients
2 cups cooked brown rice
1 pound chicken thighs
2 tbsp chipotle peppers in adobo
1 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
Salt and pepper
1 cup corn
1 cup black beans
1 avocado
1 cup diced tomatoes
1/2 cup shredded cheese
Fresh cilantro
Instructions
1. Cut chicken into pieces
2. Season chicken with spices
3. Cook rice
4. Cook chicken in skillet
5. Add corn and beans
6. Assemble bowls with toppings
