Description
Fresh chickpea salad with avocado, cucumber, herbs, and lemon dressing. A quick healthy vegetarian meal perfect for meal prep.
Ingredients
2 cups cooked chickpeas
1 avocado diced
1 cup diced cucumber
1 cup halved cherry tomatoes
1/4 cup finely chopped red onion
1/4 cup chopped parsley
3 tbsp olive oil
2 tbsp lemon juice
1 garlic clove minced
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. Drain and rinse chickpeas.
2. Dice cucumber, avocado, tomatoes, and onion.
3. Whisk olive oil, lemon juice, garlic, salt, and pepper.
4. Combine chickpeas and vegetables in a bowl.
5. Add dressing and toss gently.
6. Serve fresh or chill before serving.
Notes
Add feta cheese for extra flavor.
Store without avocado for longer freshness.
