Ingredients
1½ lbs baby potatoes
3 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
1 tsp salt
½ tsp black pepper
1½ cups shredded mozzarella
½ cup shredded cheddar
Fresh parsley optional
½ cup sour cream
¼ cup mayonnaise
2 garlic cloves minced
1 tsp lemon juice
Instructions
1. Preheat oven to 425°F and line a baking sheet.
2. Cut potatoes into bite-sized pieces.
3. Toss with oil and seasonings.
4. Roast for 25 minutes, flipping halfway.
5. Top with cheeses and bake until melted.
6. Mix dip ingredients in a bowl.
7. Serve potatoes hot with garlic dip.
Notes
Use freshly shredded cheese for best melting.
