Description

Baked cauliflower gnocchi bolognese made with Trader Joe’s cauliflower gnocchi and a rich, hearty tomato meat sauce.


Ingredients

2 bags Trader Joe’s cauliflower gnocchi

2 tbsp olive oil

1 lb ground beef or turkey

1 medium onion, chopped

3 garlic cloves, minced

2 tbsp tomato paste

1 can crushed tomatoes

1 tbsp Italian seasoning

1 tsp salt

1/2 tsp black pepper

1/2 cup grated Parmesan


Instructions

1. Preheat oven to 425°F and bake cauliflower gnocchi with olive oil for 25 minutes, flipping halfway.

2. Brown ground meat in a skillet, then add onion and garlic.

3. Stir in tomato paste, crushed tomatoes, and seasoning.

4. Simmer sauce for 10–15 minutes.

5. Combine baked gnocchi with sauce, top with Parmesan, and bake 10 minutes.

Notes

Bake gnocchi straight from frozen for best texture.

Substitute lentils for a vegetarian version.
