Description

Healthy carrot cake energy balls made with dates, walnuts, carrots, and warm spices. A quick no-bake snack perfect for meal prep.


Ingredients

Scale

1 cup medjool dates

1/3 cup shredded carrots

1 cup walnuts

1 tbsp chia seeds

1/3 cup shredded coconut

1/2 tsp cinnamon

1/4 tsp nutmeg

Pinch of salt

1 tsp vanilla extract

1/2 cup shredded coconut for rolling


Instructions

1. Soak dates in warm water for 5 minutes if needed.

2. Pulse walnuts in a food processor until crumb-like.

3. Add dates, carrots, chia seeds, coconut, cinnamon, nutmeg, salt, and vanilla.

4. Blend until sticky.

5. Roll into small balls.

6. Coat in shredded coconut.

7. Chill for 20 minutes before serving.

Notes

Store in fridge up to 5 days.

Freeze up to 2 months.
