Description

Soft carrot cake cheesecake bars with warm spices and a creamy swirl layer, perfect for Easter and spring gatherings.


Ingredients

1/2 cup melted butter

1 cup light brown sugar

1 large egg

1 tbsp vanilla extract

1 cup all-purpose flour

1 tsp cinnamon

1/4 tsp baking powder

1/4 tsp salt

1 cup shredded carrots

4 oz cream cheese

1/4 cup granulated sugar

1 egg yolk

3/4 tsp vanilla extract


Instructions

1. Preheat oven to 350°F and line an 8×8 pan with parchment paper.

2. Mix melted butter and brown sugar.

3. Add egg and vanilla.

4. Stir in dry ingredients and fold in carrots.

5. Spread batter into pan.

6. Beat cream cheese, sugar, egg yolk, and vanilla.

7. Spoon cheesecake mixture over batter and swirl.

8. Bake 30-35 minutes until set.

9. Cool completely and chill before slicing.

Notes

Use freshly grated carrots for best texture.

Chill bars before slicing for clean edges.
