Description
A colorful BEST Thai Noodle Salad tossed with crisp vegetables and a creamy spicy peanut sauce. Perfect healthy vegetarian noodle salad for meal prep or potlucks.
Ingredients
12 oz dry noodles
2 cups shredded purple cabbage
2 cups julienned carrots
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 cup shelled edamame
4 scallions, sliced
1/2 cup chopped cilantro
1 batch homemade peanut sauce
Instructions
1. Cook noodles according to package instructions. Drain and rinse under cold water.
2. Shred cabbage and carrots. Slice bell peppers and scallions. Chop cilantro.
3. Prepare peanut sauce by whisking all sauce ingredients until smooth.
4. Combine noodles and vegetables in a large bowl.
5. Pour peanut sauce over salad and toss until evenly coated.
6. Adjust seasoning and garnish with extra cilantro or chopped peanuts before serving.
Notes
Store in an airtight container up to 4 days.
For extra protein, add baked tofu or shredded chicken.
Adjust spice level with additional sriracha if desired.
