Crispy low carb cauliflower fritters made with eggs and light seasoning. Perfect for keto, vegetarian, bariatric, and diabetic-friendly meals.
Ingredients
5 cups chopped cauliflower florets
2 eggs
1/2 cup all-purpose flour
1/2 tsp baking powder
Salt to taste
Black pepper to taste
Avocado oil for frying
Instructions
1. Steam cauliflower until fork-tender and drain well.
2. Squeeze out excess moisture using a clean towel.
3. Mix cauliflower with eggs, flour, baking powder, salt, and pepper.
4. Heat avocado oil in skillet over medium heat.
5. Form patties and flatten slightly.
6. Cook 3-4 minutes per side until golden brown.
7. Drain on paper towel and serve warm.
Notes
For keto variation use almond flour.
Do not skip moisture removal step for best texture.
