Description
A fluffy baked protein pancake bowl made with yogurt, milk, flour, and protein powder. A quick healthy breakfast perfect for meal prep.
Ingredients
1 egg
50 g yogurt vanilla or plain
70 ml milk (soy, almond or dairy)
35 g all purpose flour
25 g protein powder vanilla or white chocolate
5 g granulated sweetener
1/2 tsp baking powder
Instructions
1. Preheat oven to 350°F (175°C) and grease a ramekin or oven-safe bowl.
2. Whisk egg, yogurt and milk together in a mixing bowl.
3. Add flour, protein powder, sweetener and baking powder.
4. Mix until a smooth batter forms.
5. Pour batter into prepared bowl.
6. Bake for 18-22 minutes until set in the center.
7. Cool for a few minutes then add toppings and serve.
Notes
Vegan protein powders may require slightly more liquid.
Top with berries, yogurt, peanut butter or maple syrup.
