Description
A tender baked garlic butter cod with green beans, finished with herbs and lemon for a simple sheet pan dinner.
Ingredients
4 cod fillets
12 oz green beans
4 tbsp unsalted butter, melted
2 tbsp olive oil
4 garlic cloves, minced
2 tbsp chopped chives
2 tbsp chopped parsley
2 tbsp lemon juice
Salt and pepper to taste
Instructions
1. Preheat oven to 400°F and prepare a sheet pan.
2. Toss green beans with olive oil, salt, and pepper.
3. Mix butter, garlic, lemon juice, and herbs.
4. Place cod on pan and spoon garlic butter over fillets.
5. Bake for 15–18 minutes until flaky.
Notes
Do not overcook cod to keep it moist.
Add kale during the last 8 minutes if desired.
