Ingredients
6 slices thick-cut bacon, diced
500 g potato gnocchi
200 g sharp cheddar, grated
1 medium onion, chopped
3 garlic cloves, minced
4 cups chicken broth
1 cup heavy cream
2 tbsp butter
2 tbsp flour
Salt, pepper, and chives to taste
Instructions
1. Cook bacon until crispy, set aside, and reserve 1 tbsp fat.
2. Sauté onion and garlic in butter.
3. Add flour, whisk to form a roux, then slowly add broth.
4. Stir in cream and cheese; melt gently.
5. Add gnocchi, cook until they float.
6. Stir bacon back in, season, and garnish with chives.
Notes
Add extra broth when reheating to restore creaminess.
Serve with crusty bread or roasted potatoes.
