Description
A fresh avocado, tomato & cucumber salad made with simple ingredients, light dressing, and quick prep.
Ingredients
2 ripe avocados, cubed
1 cup cherry tomatoes, halved
1 large cucumber, diced
2 tbsp red onion, finely chopped
2 tbsp fresh parsley, chopped
3 tbsp olive oil
1½ tbsp lemon juice
Salt and black pepper to taste
Instructions
1. Prepare all vegetables and place them in a large bowl.
2. Whisk olive oil, lemon juice, salt, and pepper in a small bowl.
3. Pour dressing over salad ingredients.
4. Gently toss to combine.
5. Serve immediately.
Notes
Add avocado last and mix gently to keep it firm.
Store dressing separately if preparing ahead.
