Description

A fresh keto avocado salad with butter lettuce, cucumber, cherry tomatoes, and a zesty lime cilantro dressing. Perfect healthy side dish or light meal.


Ingredients

6 leaves butter lettuce

1/2 cup corn

1 hass avocado, diced

1/2 English cucumber, diced

1/4 cup red onion, finely diced

1 cup cherry tomatoes, halved

1/4 cup cilantro leaves

1/4 cup white wine vinegar

1/4 cup olive oil

2 tbsp lime juice

2 tbsp maple syrup

1/2 tsp Dijon mustard

1/8 tsp salt


Instructions

1. Wash and dry butter lettuce. Tear into bite-sized pieces.

2. Dice cucumber, red onion, and halve tomatoes.

3. Dice avocado and add to bowl.

4. Blend dressing ingredients until smooth.

5. Drizzle dressing over salad and toss gently. Serve immediately.

Notes

Use firm ripe avocado for best texture.

Replace corn for lower carbs if desired.
