Description
Creamy avocado deviled eggs without mayo made with fresh herbs, capers, and olive oil for a healthy twist on the classic appetizer.
Ingredients
6 large eggs
1 ripe avocado
2 tbsp extra virgin olive oil
1/4 tsp Dijon mustard
1 tsp white wine vinegar
1 tsp capers
1 small clove garlic
1 tbsp jalapeño, minced
1 tbsp fresh chives
1 tbsp fresh cilantro
1/4 tsp kosher salt
1/4 tsp black pepper
Pinch paprika
1 radish, thinly sliced
Instructions
1. Boil eggs using preferred method and cool in ice bath.
2. Peel and slice eggs lengthwise.
3. Remove yolks and place in bowl.
4. Add avocado, olive oil, mustard, vinegar, capers, garlic, jalapeño, salt and pepper.
5. Mash until smooth.
6. Fold in chives and cilantro.
7. Pipe mixture into egg whites.
8. Garnish with paprika and radish.
Notes
Use fully ripe avocado for best texture.
Store in airtight container and serve within 24 hours.
